Unrelated to true cod, lingcod is a lean white fish with a mild flavor, medium-firm texture, and large flakes. Ours is sustainably caught by longline off the coasts of British Columbia or Southeast Alaska. Delicious when pan-fried or in tacos, chowder, or cioppino.
